sweet date pudding with a brandy glaze

There is always room for dessert, always! This delicious date pudding with a brandy glaze is best served warm with a scoop of ice cream or whipped cream. The pudding in the picture is served with our smoked ice cream.

It’s quick and easy to make in a mixer or Thermomix and place in the oven after you take a roast out to bake, or popped back in the oven to reheat before serving. It can easily be made gluten free with gluten free flour and baking powder.

ingredients

for the pudding

  • 120g dates
  • ½ tsp bicarb of soda
  • 110g boiling water
  • 60g butter
  • 60g sugar
  • 1 egg
  • 120g flour
  • ½ tsp baking powder
  • 85g walnuts

for the syrup

  • 75g Sugar
  • 60g butter
  • 110g water
  • ½ tsp vanilla essence
  • 70ml brandy (or preferred dark spirit)

directions

for the pudding

  1. Pit and chop dates into pieces, place in a large bowl and cover with boiling water and bicarb. Allow mixture to cool.
  2. Using a Kenwood Mixer or equivalent beat butter and sugar together until fluffy and creamy.
  3. Add egg and mix well.
  4. Fold in sieved dry ingredients and then add the date mixture with chopped walnuts.
  5. Pour into a greased baking dish (I use a square pyrex dish with 2 litre/70oz capacity). Bake for 40 mins in 180c/355f oven.

for the syrup

  1. Heat sugar, butter and water on stove stirring until sugar has dissolved.
  2. Add vanilla and brandy and pour over cooked pudding.
  3. Enjoy your sweet date pudding!

Thermomix directions

for the pudding

  1. Remove pips from dates, add to TM bowl and set to close lid and press turbo 3 times.
  2. Remove to large bowl, cover in 140ml boiling water and bicarb and set aside while allowing mixture to cool
  3. Add butter and sugar to TM bowl and mix for 10seconds on speed 5.
  4. Add egg and mix 10 seconds on speed 5.
  5. Add flour and baking powder and mix 10 seconds on speed 5.
  6. Add walnuts and set to close lid and press turbo 3 times.
  7. Add date mixture and mix 10 seconds on speed 5.
  8. Pour into a greased baking dish (I use a square pyrex dish with 2 litre/70oz capacity). Bake for 40 mins in 180c/355f oven.

for the syrup

  1. Add sugar, butter water to TM bowl and heat at 100 deg, 2 mins, speed 2.
  2. Add vanilla essence and brandy and pour over cooked pudding.
  3. Serve while warm with cream or ice- cream.
  4. Enjoy your sweet date pudding!
