raw and refined sugar free protein balls with lemon, coconut and almonds

Lemons… a housewife’s best friend. So versatile for baking, cooking and cleaning! We love lemons in sweet or savoury dishes and our kids enjoy homemade lemonade. I always use a lemon to descale my kettle (the water boiling variety not the barbecue!) and clean the kitchen sink so its a good thing our lemon tree fruits all year round. 

These lemon coconut protein balls pack a lemon punch and are easy peasy to make. 

ingredients

  • 100g shredded coconut (plus ½ cup for rolling)
  • 100g ground almonds
  • 60g coconut oil
  • 4 Medjool dates
  • 20g honey
  • zest and juice of whole lemon
  • 1 tsp vanilla essence
  • 1 tbsp vanilla protein powder

directions

  1. Put all ingredients into blender and process for 2 minutes until combined. Thermomix 2 minutes, speed 5.
  2. Form into small balls and roll in shredded coconut.
  3. Keep in fridge and enjoy your lemon coconut balls!
