Rice crispy treats are an absolute favourite in my house the kids love them, I love them and they are easy to make. My eight-year-old was able to mostly make these himself (with some help pouring the hot mixture). We spiced things up by adding some nerds for a pop of colour and a little sour crunch and of course used gluten-free rice bubbles. The recipe is only four ingredients: marshmallows, rice, bubbles, butter, and vanilla essence. You only need a scale, bowl, measuring spoons, pot, spoon and a lined baking tray to make this recipe. Kids need to be careful of the hot mixture but it is a good opportunity for them to experience being careful on the stove and are able to complete most of the steps themselves. Once the slice is set an adult can help cut into pieces. These treats should be stored into the fridge.

ingredients

30g butter
280g white and pink marshmallows
1 teaspoon vanilla essence
90g rice bubbles (we used Kellogg’s gluten free)
Optional 1 Tablespoon nerds or small candy

directions

  1. Place rice bubbles in large bowl.
  2. Melt butter in a medium sized pot.
  3. Reduce heat and add marshmallows, stirring until melted.
  4. Add vanilla essence and stir through.
  5. Pour marshmallow mixture over rice bubbles and stir until mixed through. Work quickly as the mixture will begin to set. Add in any optional items at this point.
  6. Spoon into lined pan (25x25cm), gently press into the pan with the bad of a spoon and allow to cool for 1 hour before cutting.
