American goulash

Not to be confused with traditional Hungarian goulash that is a chunky beef stew, American goulash is a one pot macaroni dish made with mince. While it has similar elements (meat and paprika) the two are very different dishes. If you are looking for a cheap, easy, one pot meal that is ready in 30minutes this is one to try. This recipe makes 5 serves and leaves only one pot to wash.

ingredients

1 onion, diced
3 cloves garlic
1 Tablespoon oil
500g beef mince (or mince of your choice)
2 teaspoons paprika
1 teaspoon Italian herbs
400g can tin tomato
1 Tablespoon tomato paste
2 cups beef stock
400g passata
120g macaroni pasta
1/2 cup grated cheese

directions

1. Heat oil in large sauté pan and cook onion until transparent, approximately 5minutes.
2. Add garlic and cook for one minute.
3. Add mince and cook until brown.
4. Add herbs, paprika, tomatoes, tomato paste, passata and stock, bring to the boil.
5. Add pasta, reduce heat and cook for 8-10minutes stirring occasionally with the lid off until pasta is tender.
6. Remove from heat, add grated cheese and allow to melt with the lid on for several minutes before serving.

You will need a measuring jug, measuring spoons, grater, sauté pot with lid and spoon.
