strawberry jam

super sweet 3 ingredient strawberry jam

We call on this recipe at Christmas time when putting together hampers for friends and family. There’s no secrets with just the 3 ingredients and once you’re up and boiling it’s a matter of knowing when the jam has set. We’ve got a couple of tips below to help you out. You can mix things up by swapping strawberries for other berries.

ingredients

  • 2kg fresh or frozen strawberries
  • 1.75kg white sugar
  • 50g jamsetta (1 packet)

directions

  1. Place the strawberries in a large pot and add sugar. Allow to sit overnight if possible. The sugar and strawberries will emulsify.
  2. Place pot on medium-high heat and begin stirring ensuring the mixture doesn’t stay in contact with the bottom or edges of the pot for too long.
  3. Once the fruit begins to break down and the sugar has dissolved add jamsetta.
  4. Keep the jam at a rolling low boil ensuring it doesn’t foam out of the pot.
  5. As the jam gets to the perfect setting point, somewhere close to the 105c/220f mark, it should roll slowly down the back of a spoon and look a little jellified. You can also test it by putting a few drops on a plate. If it sets on the plate it’s done.
  6. Pour into airtight jars and into the fridge.*
  7. Enjoy your homemade strawberry jam!

*Wash your old jars and lids in hot soapy water until squeaky clean. Place jars in the oven at 100c/210f for 20 minutes. Place lids in a pot of water and bring to the boil. Reduce heat and simmer for 5 minutes. Place jars and lids on a rack to dry.

If you like your jam smooth use a stick blender prior to pouring into jars.
