This dish was the third course at our inaugural Slow and Low event and was the most popular. Slow smoked lamb has an amazing flavour and richness to it that works well with many other foods including chilli, vegetables and honey. The lamb was served with spiced carrots, crème fraiche and smoked honey with all the flavours combining well together. As well as carrots cauliflower, potatoes and even Brussels sprouts can be served with the lamb and all go well with honey.

One lesson we learned when preparing for the event was the amount of wastage and shrinkage in slow cooked meats. Lamb shoulder has one of, if not the highest percentage of wastage at around the 60% mark. Shrinkage is one major factor along with all the bones found in the shoulder.

ingredients (serves 5)

  • 750g smoked pulled lamb shoulder
  • 8 large carrots sliced into 7 lengths
  • 2 tbsp. butter
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp freshly grated ginger
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • black pepper
  • 5 tsp creme fraiche
  • 20 pea sprouts
  • fire.works & smoke smoked honey

directions

  1. Follow our guide for smoked lamb shoulder using Greenwood Barbecue Tree Bark.
  2. Preheat oven (or barbecue) to 180c/355f.
  3. Peel carrots and cut into 7 lengths.
  4. Place an oven tray large enough to fit the carrots in one layer in the oven along with the butter. As soon as the butter has melted add carrots and salt and coat the carrots in the butter. Cook for 15 minutes.
  5. After 15 minutes add spices and ginger and mix through ensuring all carrots are covered in the spices.
  6. Continue to cook until the carrots are soft but not falling apart. You want them to still have a bite to them.
  7. Spoon the creme fraiche onto a plate and spread out with the back of a spoon. Add carrots followed by pea sprouts then drizzle with a generous amount of honey and pepper. Add the lamb to the plate and it’s ready to go.
  8. Enjoy your pulled lamb shoulder with spiced honey carrots!
