Stuffed spuds… just another way of serving up pulled pork. And a delicious one at that. Stuffed spuds are essentially potato skin cups packed with mashed potato. We’ve also added some cheese into the mash along with seasoning to make it extra tasty.

Sweet chilli and sour cream make a great team, often paired with wedges at your local. Chilli jam or your favourite hot sauce will also work a treat. Top with some chives and spring onions and you have a great blend of flavours along with the pork and spuds.

ingredients

  • 2 large potatoes
  • oil
  • 40g butter
  • grated cheese
  • salt and pepper
  • pulled pork or pork collar
  • chopped chives
  • chopped spring onions
  • sour cream
  • sweet chilli sauce or chilli jam

directions

  1. Preheat your oven or BBQ (indirect cooking) to 355f/180c.
  2. Prick the potatoes all over using a fork.
  3. Rub the potatoes with a little oil and place on a rack inside a baking tray and into the oven/BBQ.
  4. Cook for about 1 hour or until, using a fork, the inside of the poatato is very soft.
  5. Allow to rest for 5 minutes and then using a knife cut across the top of the potatoes and half way down the sides.
  6. While resting, add the butter, some cheese, salt and pepper (or your favourite BBQ seasoning) to taste into a large bowl.
  7. Using a spoon carefully remove the flesh from the potatoes so not to split the skins completely. Add the flesh to the bowl with the butter and cheese and mix through until all combined and fluffy.
  8. Carefully return the flesh back into the skins.
  9. Top with the pork, chives, onions, sour cream and sweet chilli, chilli jam or hot sauce.
  10. Enjoy your pulled pork stuffed spuds!
