As far as smoked pulled meats go lamb shoulder sits right at the top of the list for us. Lamb is packed with an almost gamey flavour and when mixed with a little honey goes next level. There are plenty of uses for pulled lamb and tacos are one of our favourites. The list of possible fillers is endless with radish, feta, lime, cabbage, pickled onion and everyone’s favourite herb coriander to name a few.

This time around we’ve dressed the lamb with a mint yogurt sauce. Lamb and mint sauce is a very Aussie mix and a good old Sunday roast lamb is often served with a mint sauce.

ingredients

for the mint yogurt sauce

  • 1/2 cup natural Greek yogurt
  • 1/4 cup mint leaves, finely chopped
  • 1/2 tsp paprika
  • lime juice to taste
  • salt and pepper to taste

*Whatever you do don’t use an off the shelf BBQ sauce packed with sugar. You can make your own (we have plenty of recipes here) or, if you live in Australia, check out Outback Pride’s Bush BBQ Sauce. They use native herbs and spices that pair really well with lamb.

  1. Smoke the lamb shoulder as discussed here.
  2. Mix through the mint yogurt dressing ingredients and adjust the seasoning as required.
  3. In a bowl, mix together the spinach, rocket, cabbage and BBQ sauce. There is no set quantities here, more a personal preference. Just take it easy on the BBQ sauce. Remember the lamb is the main player.
  4. Pull the lamb and mix through a generous amount of honey.
  5. Toast your tortillas, add the spinach and rocket mix followed by the lamb and top with the mint yogurt dressing.
  6. Enjoy your smoked lamb tacos with honey and mint yogurt dressing!
