lemon chia cake

When our lemon tree comes to the end of it’s season I like to celebrate all it’s hard work by making a lemon based dessert. While lemon and poppy seed is more common when it comes to cakes I find that poppies add a little more crunch that I don’t always enjoy.

Chia seeds are also a great little nutrient boost being high in fibre, protein and rich in minerals such as calcium and magnesium. The Greek yogurt adds to the flavour and helps balance the acidity of the lemon as well as keeping the cake from drying out.

Enjoy with or without icing, I know which I prefer! I used some left over cream cheese icing that I had in the freezer from a previous carrot cake.

Lemon Chia Seed Cake with Cream Cheese Icing

ingredients

  • 1 lemon, zest and juice
  • 160g white sugar
  • 120g butter
  • 270g flour
  • 120g plain Greek yogurt
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 teaspoon baking soda
  • 40g chia seeds

directions

  1. Preheat your oven to 180c/355f.
  2. Beat together sugar and butter until light and fluffy.
  3. Add all ingredients except for the chia seeds and beat until just combined.
  4. Stir in chia seeds.
  5. Pour into greased 28cm/11in spring loaded tin.
  6. Bake for 30 minutes or until a skewer comes out clean.
  7. Enjoy your lemon chia cake!

Thermomix directions

  1. Preheat your oven to 180c/355f.
  2. Peel lemon and place rind in the TM bowl with sugar and mix for 15 seconds, speed 7.
  3. Add butter and mix for 10 seconds, speed 7.
  4. Add lemon juice and all other ingredients (except chia seeds) and mix for 10 seconds, speed 7. Scrape down the bowl and repeat.
  5. Add chia seeds and mix for 10 seconds, reverse speed 4. 
  6. Pour into greased 28cm/11in spring loaded tin.
  7. Bake for 30 minutes or until a skewer comes out clean.
  8. Enjoy your lemon chia cake!
