I have always loved corn, corn kernels in a can, corn on the cob boiled, corn on the cob grill. There is something satisfying about buying corn still in their husks and eating sweet corn kernels row by row until only the cob is left. Even better that corn in the husk is currently only $1 at the local supermarket. I stumbled across Cajun spiced corn ribs after ordering them at restaurant and fell in love. There is not much better than fresh corn, covered in spices and cooked on the bbq.

I’ve been working to perfect my recipe and the hardest part of this recipe is cutting the corn cob in quarters. Cutting off the top and bottom, standing upright and slowly cutting in half with your sharpest knife (ensuring all your finger are above the knife). The trick is to get the exact middle spot, otherwise you end up slicing the kernels clean off the cobs. Try to count the kernels to get the middle spot. It is much easier to cut the corn this way as it is very hard to slice it lying flat and you end up damaging the kernels. It takes practice so grab a few extra corn cobs or cut them in half so you have a smaller cob to work with.

ingredients
6 corn cobs
15g salt
10g paprika
10g black pepper cracked
5g garlic powder
3 Tablespoons oil
150g butter
2 cloves garlic

optional dipping sauce
2 Tablespoons Greek yogurt
2 teaspoons BBQ Sauce (make your own with our espresso BBQ sauce recipe)
Mixed together in small bowl ready to serve

directions
1. Cut the corn carefully into quarters by taking off the top and bottom and standing upright to cut through the middle. Rub oil over the corn and lay them kernel side up in a large dish or bowl.
2. Mix salt, paprika and pepper together and pour over corn kernels.
3. Melt butter and garlic together. Use brush to lightly over each corn slice. You will have plenty of left over to add to the corn after cooking.
4. Cook on hot grill kernel side down fro 7-8 minutes until slightly curled and lightly charred, flip and cook for another 2-3 minutes.
5. Once cooked pour remaining butter mixture over corn and get ready to serve.
