ciabatta bread

Homemade bread is easy to make but time consuming as you need time to allow the mixture to rise at least twice. Ciabatta bread is a lovely crusty bread that is soft and bubbly on the inside. The process to make the dough is very simple and can be made in a food processor but you will need 4 hours from start to finish – it’s sticky and your hands will get dirty!

This recipe has been adapted from the thermomix recipe community.

ingredients
500g bread flour
470g warm water
1 packet yeast (7g)
2 tsp salt

directions:
1.  Add all ingredients in the food processor or thermomix and mix on (speed 6 for 8 seconds). Let mixture rest in bowl for 10 minutes. 
2. Mix on high speed for 3 minutes. (speed 9 for 3 minutes on reverse).
3. Pour into a large well-oiled bowl and let sit for 2.5 hours until tripled in size. (Cover in glad wrap and find a sunny spot outside or place in over a warm sink.)
4. Pour mixture onto floured pastry mat. At this point you can separate into three mini loaves or leave to bake as one large loaf. Place on to baking paper and leave to rise again for 45 minutes. While waiting, turn the oven to 250c to heat up.
5. Bake at 250c for 10 minutes , then turn the oven down to 200 for another 15-20 until bread is starting to brown and sounds hollow when tapped on the bottom.
