chocolate, pecan and date brownies

gluten free brownies packed with pecans, dates and white chocolate

When it comes to sweet comfort food our go to is brownies and I’m sure we’re not alone! There is no shortage of brownie recipes on our site. Some are healthy, some a little naughty but they’re all built around the idea of being chocolatey and gooey.

We’ve kept these ones gluten free by using almond flour and used some natural sweeteners alongside the chocolate chips. Prep time is short, around 15 minutes and baking time around 20.

ingredients

  • 80g Medjool dates (about 6)
  • 80g pecans (about 3/4 cup)
  • 120g almond flour (1.5 cups)
  • 4 eggs
  • 1/2 cup coconut oil
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 30g cocoa (1/4 cup)
  • 110g maple syrup (1/3 cup)
  • 50g cup coconut sugar (1/4 cup)
  • 120g white chocolate chips (3/4 cup)

Thermomix directions

  1. Preheat your oven to 170c/340f and line a 20cm/8in x 20cm/8in baking dish.
  2. Add the dates and pecans to the TM bowl and blitz for 15 seconds, speed 7.
  3. Add the remaining ingredients to the bowl except for the chocolate chips and mix for 15 seconds, speed 5.
  4. Add the chocolate chips and mix through reverse speed 2, 15 seconds.
  5. Pour the mixture into the lined dish, flatten out and bake for 20 minutes or until a skewer comes out clean.
  6. Enjoy your chocolate, pecan and date brownies!

food processor directions

  1. Preheat your oven to 170c/340f and line a 20cm/8in x 20cm/8in baking dish.
  2. Add the dates and pecans to your blender and blitz until they form large crumbs.
  3. Add the remaining ingredients to the blender except for the chocolate chips and mix on medium until well combined.
  4. Transfer the mixture to a bowl and mix through the chocolate chips.
  5. Pour the mixture into the lined dish, flatten out and bake for 20 minutes or until a skewer comes out clean.
  6. Enjoy your chocolate, pecan and date brownies!
