apple crumble pie with Lane’s BBQ dessert apple pie seasoning

We are big fans of Golden Barrels’ Paleo Apple Pie Crumb Bars. The shortbread crust, the apple centre and crunchy top combine really well. It’s great served warm with custard or ice-cream and if you’re after a quick snack it’s tasty just on it’s own. They are also vegan, dairy and gluten free. The crust is easy to work with can be pressed into a square tin or rolled flat and transferred into a pie tin. We have experimented with the topping and found that the addition of gluten free rolled oats and replacing the pecan nuts with almond flakes makes a more traditional crumble topping.

We had a great time converting the recipe into a apple crumble pie. It can be baked in your kitchen oven but also works well in the BBQ, we use our Weber Kettle. The ingredients and Thermomix directions below are for our version of the slice and pie.

ingredients

for the base

  • 200g almond flour (275g for pie)
  • 20g coconut flour (30g for pie)
  • 75g coconut oil (100g for pie)
  • 100g rice malt syrup

for the apple layer

  • 3 large apples (5 apples for pie)
  • 1 tbsp Arrowroot powder
  • 1 tbsp Lane’s BBQ Dessert Apple Pie Seasoning
  • 1 tbsp water

for the topping

  • 1/3 cup gluten free rolled outs (1/2 cup for pie)
  • 1/3 cup almond flakes (1/2 cup for pie)
  • 1 tbsp Lane’s BBQ Dessert Apple Pie Seasoning

Thermomix directions

for the base

  1. Add almond meal, coconut flour, coconut oil and rice malt syrup to TM bowl. Mix for 10 seconds, speed 5.
  2. Transfer 1/4 of the mixture to a medium size bowl to use for the topping.
  3. Press the rest of the base mixture into a lined baking tin (23cm/9in square) and bake for 12 minutes in a 180c/355f oven or BBQ. For a pie – roll the dough into a ball and using a rolling pin flatten onto grease proof paper until the ball is as large as the pie tin. Flip the paper with the dough into a greased tin and press into the groves. With the grease proof paper on top of the dough and add pie weights prior to baking.
  4. Wipe out TM bowl with paper towel, no need to wash.

for the filling

  1. Peel, core and roughly chop apples. Add to TM bowl.
  2. Add Lane’s Apple Pie Seasoning, arrowroot flour and water to apple mixture. Heat on 100 degrees, 6 minutes, reverse soft speed.
  3. Pour over baked base.

for the topping

  1. Add the oats, almonds and Lane’s Apple Pie Seasoning to the remaining dough.
  2. Use your fingers to rub the ingredients together.
  3. Sprinkle the topping over the apple mixture and press down to ensure it stays in place.
  4. Bake for 25 minutes at 180c/355f.
  5. Enjoy your apple crumble pie!
