Italian bakery vanilla cookies with sprinkles from serious eats.

These colourful vanilla cookies are a lovely treat for any occasion. As you can imagine they are a favourite with kids. You can find the Thermomix conversion below.

ingredients 

  • 340g flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 170g unsalted butter
  • 110g white sugar
  • 60g icing sugar
  • 80g coconut oil
  • 1 egg
  • 2 teaspoons vanilla
  • About 1 cup rainbow sprinkles

Thermomix directions

  1. Add butter to TM bowl and if necessary soften for 5 seconds, speed 7.
  2. Add butterfly, sugars and oil to butter and mix for 1 minute, speed 5.
  3. Add egg and vanilla and mix for 30 seconds, speed 5.
  4. Add dry ingredients and mix for 15 seconds, speed 5.
  5. The dough will be very soft so wrap it in plastic wrap and refrigerate for at least one hour.
  6. Form dough into little balls, roll in sprinkles and bake for 20 minutes at 180 degrees celsius.
