I have a love hate relationship with coconut flour. I’ve never been overly impressed with it and find anything that I make with it too dense. These gluten free chocolate bars have swayed me back to the coconut flour corner.

I found this recipe for the best coconut flour chocolate chunk bars on the Ambitious Kitchen website and the writer had similar coconut flour experiences to me.

After reading the recipe I decided to give coconut flour another go and was pleasantly surprised by the results.

Thermomix directions

  1. Put the coconut oil, honey, vanilla, milk (I didn’t use almond milk) and eggs in the TM bowl and mixed for 10 seconds, speed 5.
  2. Add the coconut flour and baking soda and mixed for 5 seconds, speed 3.
  3. Stir through the dark chocolate chips.

The result was a soggy looking paste that was incredibly hard to spread around. You just have to persist. I baked it for 20 minutes but it needed another 5 minutes until the middle was brown and spongy.

I was super impressed with the results!
