nut, gluten and dairy free muesli bar bites – perfect for school lunch boxes

With many schools having a nut free policy due to potentially deadly allergies I have been experimenting with muesli bars that will be both safe for school lunch boxes and ones that I can eat (gluten free, dairy free and low FODMAPs). After purchasing Bob’s Red Mill wheat free oats I was ready to get baking and enjoying having oats back in my diet.

The inspiration for these little nut free muesli bites comes from the Skinnymixer’s Choc Chip Oat Slice.

ingredients

  • 300g oats (wheat free if needed)
  • 65g coconut sugar
  • 65g almond milk (make your own using our recipe)
  • 2 eggs
  • 15g chia seeds
  • 40g sunflower seeds
  • 80g pepitas
  • 100g dark chocolate chips (dairy free if needed)

directions

  1. Preheat oven to 190c/375f.
  2. Add oats to high speed blender and pulse 2-3 times until oats are roughly chopped.
  3. In a large bowl combined all ingredients.
  4. Press into a lined baking tin and bake for 20mintes at 190 degrees Celsius.

Thermomix directions

  1. Preheat oven to 190c/375f.
  2. Add oats to TM bowl and mix for 3 seconds, speed 5.
  3. Add coconut sugar, almond milk and eggs and mix for 10 seconds, speed 3.
  4. Add seeds and chocolate chips and mix for 10 seconds, reverse speed 3.
  5. Press into a lined baking tin and bake at 190c for 20 minutes..
  6. Enjoy your nut free muesli bites!
