green tea choc chip cookies, gluten and dairy free

Matcha green tea is full of antioxidants known to improve your immune system, aid detoxification, maintain gastrointestinal health and promote energy. This magical green powder is an acquired taste. I enjoy it with warm water in a green tea latte with almond milk, coconut green tea mango ice-cream or even 1/4 teaspoon in my morning green smoothie.

Call me crazy but I had an idea to add matcha tea powder to a choc chip cookie. I (and the kids most importantly) was impressed with the results… sweet, slightly chewy and delicious!

ingredients

  • 125g copha or coconut oil
  • 85g castor sugar
  • 1tsp vanilla extract
  • 1 egg
  • 1 tbsp match tea
  • 170g gluten free flour
  • 1/2 tsp baking soda
  • 1/2 cup dark chocolate chips (dairy free)

directions

  1. Beat copha and castor sugar until smooth.
  2. Add vanilla extract and egg and mix until combined.
  3. Add matcha tea, gluten free flour and baking soda, mix until combined.
  4. Stir through chocolate chips.
  5. Roll into small balls and add two chocolate chips on top.
  6. Bake for 10 minutes in 180 degrees Celsius (355f) oven.

Thermomix directions

  1. Mix copha and castor sugar until smooth – 30 seconds, speed 7.
  2. Add vanilla extract and egg – 10 seconds, speed 5.
  3. Add matcha tea, gluten free flour and baking soda – 20 seconds, speed 5.
  4. Stir through chocolate chips.
  5. Roll into small balls and add two chocolate chips on top.
  6. Bake for 10 minutes in 180 degrees Celsius (355f) oven.
