maple lime aioli

Thermomix made maple syrup and lime aioli

Making aioli and mayonnaise in the Thermomix is just too easy! Once you have organised all the ingredients the whole process then takes less than 5 minutes. There are plenty of flavouring options for aioli from honey, mustard, herbs, basil, different oils, the list goes on. This time around I was looking for a condiment to use in a pork belly burger. Having previously used maple syrup when barbecuing pork ribs I decided to give it a go. The strong acidity of the limes helps to cut through the sweetness of the syrup. I really do like how the two flavours compliment each other.

ingredients

  • 1 garlic glove
  • rosemary leaves from a 5cm long sprig
  • 1 egg yolk
  • 1 tsp dijon mustard
  • 1 tbsp lime juice
  • 25g maple syrup
  • 150g grapeseed oil
  • salt and pepper to taste

directions

  1. Place the garlic and rosemary in the TM bowl, chop for 3 seconds, speed 4.
  2. Scrape down the sides of the TM bowl and chop for a further 3 seconds, speed 4.
  3. Add the egg yolk, mustard, lime juice, maple syrup, salt and pepper to the TM bowl. Mix for 30 seconds, speed 4.
  4. Continue running on speed 4 and slowly drizzle the oil over the MC for a further 3 minutes. Taste and adjust the seasoning if needed.
