fresh summer mangoes are a great addition to any meal and add a tangy twist to a bbq sauce

Mangoes are a huge hit in our house. Everyone loves them including our dog who developed a taste for them foraging for fruit from a mango tree in our previous home.  I have spent years perfecting the best way to get the most flesh off the fruit using a cup to cut the flesh from the skin and pip. If you are not sure how to do this youtube has some great clips. It is quick and easy and allows you to catch as much of the mango juice as possible.

Here at Messy Benches HQ we make a batch of BBQ sauce monthly and we’re always experimenting with different variations. This mango BBQ sauce took a few attempts to perfect but I am happy with the results. This one is kid friendly with the optional cayenne pepper. We recently used this BBQ sauce as a pork rib glaze with honey at a ratio of 3:1.

ingredients

  • 15g oil (grapeseed or olive)
  • 2 cloves garlic
  • 2 shallots
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon sweet paprika
  • 1/2 teaspoon onion powder
  • 250g tomato passatta
  • 100g apple cider vinegar
  • 1 tablespoon molasses (20g)
  • 100g raw sugar
  • 60g tomato paste
  • 3 ripe mangos (approx. 650g) – can be substituted for canned mangos

directions

for Thermomix

  1. Chop garlic and shallots for 5 seconds, speed 7. Scrape down TM bowl.
  2. Add oil cook 100 degrees, 3 minutes, speed 1.
  3. Add remaining ingredients to TM bowl and cook at 100 degrees, 25 minutes,  speed 1.
  4. Allow to cool and blitz 1 minute, speed 10. Store in an airtight container in the fridge for 2-3 weeks.

for stovetop

  1. Finely chop the shallots and garlic and saute in oil over a medium heat for 8 to 10 minutes until slightly golden.
  2. Add the remaining ingredients, bring to almost boiling then reduce and simmer until the sauce thickens, roughly 25 minutes.
  3. Allow the sauce to cool slightly before transferring to a food processor and blend until smooth.

This recipe makes for a lot of sauce so you may want to freeze some for a rainy day.
