To all the gluten free Nigella fans this one is for you! This lemon polenta cake has a great flavour and texture but you may prefer the polenta to be a little bit finer. I would also contemplate giving it a blitz in a blender or Thermomix before getting started.

You can also make your own almond meal, icing sugar and use raw sugar with the lemon zest. Here’s the recipe…

 

Nigella’s Gluten Free Lemon Polenta Cake

Thermomix directions

  1. Mix the sugar and peeled zest for 10 seconds, speed 7. Transfer to another bowl.
  2. Softened the butter for 10 seconds, speed 7. Add the sugar and zest mixing for another 10 seconds, speed 7.
  3. Weigh the almond meal and polenta in a bowl on top of the Thermomix so you can use the scales.
  4. Run the TM continuously on speed 3 while spooning ingredients in and after an egg increase to speed 7 until all mixed through. The whole process took just over a minute.
  5. Give the bowl a final scrape down and mix for 10 seconds to ensure everything is mixed through before baking.
  6. The icing was simply 100 degrees, 2 minutes, speed 3.
