I love ice cream. Love it! I am always looking forward to the weather warming up and the opportunity to experiment with more flavours and textures. And you wouldn’t believe it but my kids love soft serve as well.

This is one of the easiest ice cream recipes you will find. Sure there is a decent amount of sugar in the condensed milk but realistically ice cream does need the right amounts of sugar and cream so it’s not a solid frozen block of ice.

I heard about this recipe while listening to Matt Preston on the radio promoting his new cookbook (called Cook Book) and he kindly shared this recipe . I was truly amazed at how similar the consistency was to soft serve and how easy it was to make. No need for the ice-cream van if you can pull this out of the freezer and mix together in 30 seconds.

ingredients

400g coconut cream

200g condensed milk

directions

Mix ingredients in a zip lock bag and freeze (preferably overnight). Once ready to serve break into pieces and mix in high speed blender or food processor until smooth. If you’re using a Thermomix – 30 seconds, speed 9. If needed can be refrozen. Delicious!
