coconut, green tea mango ice cream

I scream, you scream, we all scream for ice cream!

Ice cream is a weakness of mine and I do love to trial making new flavours at home. Green tea soft serve sounds delicious and perfect for a warm and sunny day so I thought I’d give it a go making it at home in my Thermomix. To add some more flavour I added mango and the result was coconut, green tea mango ice cream.

While the coconut flavour was intense it was a good combination of flavours. Fruity, creamy and just a hint of green tea. Can be made in a thermomix or a kitchen blender. If you are interested in more ice cream recipes check out my Thermomix recipe for Matt Preston’s coconut soft serve.

ingredients

  • 2 teaspoon matcha tea
  • 1 Tablespoon boiled water
  • 400ml coconut cream
  • 425g can mango (if fresh use the flesh of two mangos)
  • 1/4 cup condensed milk (80g)

directions

  1. If using tinned mango drain the flesh from syrup or juice as you will only use the flesh.
  2. Combine the matcha tea powder and just boiled water.
  3. Add all ingredients to a large ziplock bag. Remove as much air as possible and seal. Mixing with your hands ensure that all the ingredients are combined and mix any left over powder into the cream mixture.
  4. Freeze the ziplock bag as flat as possible as you will need to break the frozen mixture up so the thinner it is the better.
  5. Once completely frozen, break the mixture into small pieces or chop with a sharp knife.
  6. Add to blender or Thermomix and blend until smooth (1 minute in Thermomix on speed 6).
  7. Serve immediately. If you need to refreeze allow to defrost slightly or chop into small pieces and blend again.
