coconut and lime mojito cocktail

Be warned. These coco mojitos addictive! Marina and I first discovered coco mojitos on our honeymoon and they quickly became a favourite of ours. I managed to get the bartender to give up most of the ingredients but nevertheless it took some experimenting with the amounts and other ingredients to get them tasting just as we remembered them.

Here in little old Perth we found it difficult to find cream of coconut (not to be confused with coconut cream). Of course like most food stuffs these days you can order it online. Upon doing some research I found a substitute consisting of sweetened condensed milk and coconut essence. This worked quite well until Marina discovered ‘coconut sweetened condensed milk’ at the supermarket which is as close as you’ll get to the real thing.

The ingredients below make two cocktails because there’s no way you’ll stop at one!

ingredients

  • 60ml vodka
  • 30ml Malibu (or another coconut rum)
  • 80ml pineapple juice
  • 60ml soda water
  • 25ml cream of coconut or sweetened condensed coconut milk
  • 10 mint leaves, crushed
  • juice of half a lime
  • 6 ice cubes

directions

  1. Crush the mint leaves and place into a cocktail shaker along with all the other ingredients except for the soda.
  2. Shake, shake, shake!
  3. Pour into two glasses, add the soda, some more ice and garnish with some mint leaves and a lime wedge.
  4. Enjoy!
