coconut and lime mojito cocktail
You’ve been warned. These coco mojitos addictive! Marina and I first discovered coco mojitos on our honeymoon and they quickly became a favourite of ours. I managed to get the bartender to give up most of the ingredients but nevertheless it took some experimenting with the amounts and other ingredients to get them tasting just as we remembered them.
Here in little old Perth we found it difficult to find cream of coconut (not to be confused with coconut cream). Of course like most food stuffs these days you can order it online. Upon doing some research I found a substitute consisting of sweetened condensed milk and coconut essence. This worked quite well until Marina discovered ‘coconut sweetened condensed milk’ at the supermarket which is as close as you’ll get to the real thing.
