chocolate peanut butter balls

protein packed dark chocolate and peanut butter protein balls

Macadamia nuts, peanut butter, coconut, maple syrup and dark chocolate… all sounds tasty to us! Protein or bliss balls are quick and easy to make in a food processor or Thermomix. They also make for a great snack or breakfast on the run. These balls have a little crunch from the crushed macadamia nuts and the maple syrup and dark chocolate topping give them their sweetness.

ingredients

for the balls

  • 3/4 cup rolled oats (we use Bob’s Red Mill Gluten Free Oats)
  • 1/2 cup macadamia nuts
  • 1/2 cup protein powder (we use vanilla flavour)
  • 1/4 cup gluten free flour
  • 1/4 cup desiccated coconut
  • 1/3 cup natural peanut butter
  • 1/4 cup tbsp maple syrup
  • 1/3 cup almond milk

for the chocolate topping

  • 1/4 cup dark chocolate
  • 1/2 tbsp coconut oil

directions

for food processor

  1. Add the oats to your high powered blender and blitz until you achieve a fine consistency.
  2. Add the macadamia nuts and pulse 2 or 3 times to turn them into small bits. You do want to turn the nuts to flour.
  3. Add the remaining ingredients and blend on low until all combined.
  4. Roll out the mixture into 10 balls and place in the fridge while you melt the chocolate and coconut oil.*
  5. Melt the chocolate and oil in a double broiler. Alternatively, melt in the microwave in 15 second intervals.
  6. Pour the chocolate oil mixture over the balls and return to the fridge to set.
  7. Enjoy your chocolate peanut butter balls!

for Thermomix

  1. Add the oats to the TM bowl and blitz for 20 seconds, speed 10.
  2. Add the macadamia nuts to the TM bowl and press turbo 2 or 3 times to turn them into small bits. You do want to turn the nuts to flour.
  3. Add the remaining ingredients and combine for 20 seconds, speed 2.
  4. Roll out the mixture into 10 balls and place in the fridge while you melt the chocolate and coconut oil.*
  5. Melt the chocolate and oil in a double broiler. Alternatively, melt in the microwave in 15 second intervals.
  6. Pour the chocolate oil mixture over the balls and return to the fridge to set.
  7. Enjoy your chocolate peanut butter balls!

*If you find the balls are to dry add a little more almond milk.
