chocolate mud cupcakes

my go-to chocolate mud cake recipe

This is my all time favourite chocolate cupcake recipe, a go to for any occasion that requires a cupcake or two. As they are a mud cake they stay moist really well and have a strong chocolate flavour. I sometimes add a rolo into a muffin case prior to baking to make a chocolate fudge mud cupcake. You can make the ganache with cream or sour cream.

ingredients

for cupcakes

  • 60g dark chocolate
  • 150g water
  • 90g butter (softened – if not using a Thermomix)
  • 220g brown sugar
  • 2 eggs
  • 100g self raising flour
  • 30g cocoa
  • 40g almond meal

for the chocolate ganache

  • 100g milk chocolate
  • 60g cream or sour cream

directions

for the cupcakes

  1. Preheat oven to 170c/340f.
  2. Melt chocolate and water in a small saucepan over a low heat.
  3. Beat sugar, butter and eggs together until light and fluffy.
  4. Add all ingredients to the sugar/egg mixture (including chocolate water) and mix until just combined.
  5. Place paper muffins cases in your trusty muffin tin and bake for 25 minutes at 170c/340f.
  6. Use a skewer to test, if it comes out clean they’re ready. Allow to cool before adding the ganache.

 for the chocolate ganache

  1. In a small pot bring cream to a boil. Add chocolate stirring until all melted and combined.
  2. Allow ganache to cool until spreadable.

Thermomix directions 

for the cupcakes

  1. Preheat oven to 170c/340f.
  2. Put chocolate and water in TM bowl and melt at 50 degrees, 2 minutes, speed 2. Transfer to a separate bowl.
  3. Add butter, sugar and eggs to TM bowl and mix for 1 minute, speed 4.
  4. Add remaining ingredients to TM bowl and mix for 10 seconds, speed 5.
  5. Place paper muffins cases in your trusty muffin tin and bake for 25 minutes at 170c/340f.
  6. Use a skewer to test, if it comes out clean they’re ready. Allow to cool before adding the ganache.

for the chocolate ganache

  1. Put chocolate and cream into TM bowl. Melt for 2 minutes, 50 degrees at speed 2.
  2. Allow ganache to cool until spreadable.

Spread the ganache as thickly (or thinly) over the muffins. On this occasion I put some sprinkles on top of the ganache. We’d love to hear about what decorations you put on your chocolate mud cupcakes!
