cheese yogurt muffins

cheesy muffins, a party favourite

These little gems are a family favourite for any entertaining and my go to recipe when asked to bring a plate of food. Kids and adults love these cheese yogurt muffins and they are every easy to make! They freeze well too.

If you want to make them even more flavoursome then add a little chopped up bacon.

ingredients 

  • 500ml plain or Greek yogurt
  • 1 egg
  • 30g vegetable oil (2 Tablespoons
  • 330g plain flour
  • 15g baking powder (1 Tablespoon)
  • 1 teaspoon salt
  • 170g Grated Cheddar Cheese

additional options

  • add three rashers of finely diced cooked bacon
  • half cheddar/half parmesan cheese
  • mixture of cheddar, parmesan and feta
  • double cheese
  • 1 teaspoon paprika

directions

  1. Whisk yogurt, oil and egg in a large bowl.
  2. Sift dry ingredients together and add to yogurt mixture with cheese. Stir until combined.
  3. Spoon into two mini muffin tins (that holds 24 muffins).
  4. Bake at 200 degrees Celsius for 20 minutes.

Thermomix directions

  1. Add yogurt, oil and egg to TM bowl and mix for 5 seconds, speed 4.
  2. Add flour, baking powder, salt and cheese. Mix for 10 seconds, speed 4.
  3. Spoon into two mini muffin tins (that holds 24 muffins).
  4. Bake at 200 degrees Celsius for 20 minutes.
