3 ingredients mixed for 20 seconds

I was recently asked to replicate a slice that contained cashews, coconut and honey all topped with a thin layer of white chocolate. After tasting the slice it was easy to tell why it was so popular.

Another bonus is that it’s super quick to make. It also contains all natural ingredients, is no bake and gluten free with an option to be dairy free too.

ingredients

  • 25og natural cashews
  • 100g shredded coconut
  • 60g honey
  • 100g white chocolate (optional)

directions

  1. Place cashews, coconut and honey in blender and mix for 20 seconds until the mixture resembles coarse sand. (Thermomix 20 seconds, speed 5).
  2. Place half the mixture in a lined square tin. Place a piece a baking paper on top of mixture and use a plastic cup or something similar to press the mixture evenly into the tin. Repeat with the rest of the mixture until it has been pressed flat.
  3. Refrigerate for 2 to 3 hours.
  4. Slice and enjoy your cashew coconut honey slice!

Optional: If using white chocolate as a topping, melt and pour onto the slice. Allow the chocolate and slice to set completely before cutting into small pieces.
