As discussed previously in my coconut flour chocolate chunk bars, I have a love hate relationship with coconut flour. Coconut flour absorbs a lot more liquid than regular flour therefore quantities are not an easy equation to work out. The best guide I have is 1/2 cup coconut flour to 1 cup regular flour. The texture and flavour of coconut flour is so different from other flours it does make it quite unique.

These banana carrot coconut muffins are a great way to bake with wholesome ingredients and you can always add some dark chocolate chips if you like a little chocolate hit.

ingredients

  • 3 over ripe bananas
  • 2 carrots
  • 50g coconut oil
  • 1 tsp vanilla extract
  • 2 eggs
  • 75g coconut flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder (gluten free)
  • 1/2 tsp cinnamon
  • optional: 1/2 cup dark chocolate chips

directions

  1. Mash banana and grate carrots finely. Mix together in a large bowl.
  2. Add coconut oil and vanilla extract to the banana mixture.
  3. Using a mixer beat in eggs one at at time and continue mixing until combined and the mixture is fluffy.
  4. Add coconut flour, baking soda, baking powder and cinnamon and mix until combined.
  5. If including chocolate chips use a spatula to mix them through the batter.
  6. Spoon into a lined muffin tin.
  7. Bake in a 180 degrees celsius oven for 25 minutes. This can also be made as a loaf and baked for 40 minutes.
  8. Enjoy your banana carrot coconut muffins.

Thermomix directions

  1. Add bananas and roughly chopped carrots to TM bowl and mix for 15 seconds, speed 7.
  2. Add coconut oil and vanilla extract and mix for 10 seconds, speed 5.
  3. Setting the Thermomix to speed 2, add eggs one at a time until completely combined (allow 30 seconds between adding the second egg).
  4. Add coconut flour, baking soda, baking powder and cinnamon and mix for 10 seconds, speed 5.
  5. If including chocolate chips use a spatula to mix them through the batter.
  6. Spoon into a lined muffin tin.
  7. Bake in a 180 degrees celsius oven for 25 minutes. This can also be made as a loaf and baked for 40 minutes.
  8. Enjoy your banana carrot coconut muffins.
