almond pulp chocolate chip cookies

cookies made with dates, almond pulp and a few white chocolate chips to sweeten things up

I have a freezer full of almond pulp from making homemade almond milk  so I am always on the hunt for new ideas and recipes to use it in. These almond pulp cookies are sweetened with dates and really don’t need any additional sugar when adding the chocolate. They are gluten free and have the option to be dairy free if you use dairy free chocolate and leave out the white chocolate chips.

They are soft and gooey and retain the just baked texture days later. You could also add chopped nuts for an additional crunchy texture. They are also kid approved!

ingredients

  • 80g dark chocolate
  • 120g dates
  • 60g hazelnut spread (we use Melrose brand but any nut spread/butter will do)
  • 1 egg
  • 1/2 teaspoon bicarb of soda
  • 150g almond pulp (derived from approximately 2 litres of almond milk)
  • 1/2 cup of white chocolate chips (optional)

directions

  1. Preheat your oven to 180c/355f.
  2. Melt the chocolate over a double boiler or in the microwave at 15 second intervals.
  3. Blend the dates until they form a smooth paste.
  4. Mix together all ingredients until combined.
  5. Spoon approximately 1 tablespoon of mixture into a circular mould and press flat.
  6. Bake for 20 minutes.
  7. Enjoy your almond pulp cookies!

Thermomix directions

  1. Preheat your oven to 180c/355f.
  2. Add chocolate to TM bowl and grate on speed 9 for 10 seconds.
  3. Melt at 60degrees for 2 minutes at speed 2.
  4. Add dates and blend for 15 seconds on speed 5, scrape the bowl and repeat.
  5. Add hazelnut spread, egg, bicarb of soda and almond pulp. Mix for 20 seconds on speed 5.
  6. Stir through white chocolate chips.
  7. Spoon approximately 1 tablespoon of mixture into a circular mould and press flat.
  8. Bake for 20 minutes.
  9. Enjoy your almond pulp cookies!
