gluten free, grain free, dairy free and refined sugar free banana bread

We love banana bread and recently I have been trying to create the perfect gluten free, grain free, dairy free and refined sugar free loaf. As well as tasting great I was also after a texture that was light and fluffy.

We have two little boys who can be picky eaters from time to time so I am delighted to announce that this almond banana bread passed the Liam (our eldest) taste test. It was also the best way to use up the almond pulp in my freezer left over from making almond milk. This recipe uses two batches of almond milk pulp.

I have also been on the hunt for a breakfast alternative for the boys from their regular toast with honey or Vegemite. Something that is packed full of natural goodness and can fill them up with protein for their morning expeditions. This almond banana bread is the perfect addition to our breakfast rotation.

ingredients

  • 2 medium ripe bananas
  • 4 medjool dates (pitted)
  • 60g coconut oil
  • 3 eggs
  • 250g almond pulp
  • 65g coconut flour
  • 2 tsp gluten free baking powder
  • 1 tsp vanilla essence
  • handful almonds (chopped)
  • 1 tsp coconut sugar (optional)

Directions

  1. Chop the dates and mash the banana in a food processor and blend until smooth.
  2. Add the eggs and oil and mix until all incorporated.
  3. Add almond pulp, coconut flour, baking powder and vanilla and continue to mix until all combined.
  4. Pour into a lightly greased loaf tin. Sprinkle chopped almonds and coconut sugar on top.
  5. Bake for 35 minutes in 180c/355f oven.
  6. Allow to cool before slicing and then it’s time to enjoy your almond banana bread!

Thermomix directions

  1. Add bananas, dates, coconut oil and eggs to TM bowl and mix for 20 seconds, speed 7.
  2. Add almond pulp, coconut flour, baking powder and vanilla essence to TM bowl and mix for 20 seconds, speed 5.
  3. Pour into a lightly greased loaf tin. Sprinkle chopped almonds and coconut sugar on top.
  4. Bake for 35 minutes in 180c/355f oven.
  5. Allow to cool before slicing and then it’s time to enjoy your almond banana bread!
